Citrus hystrix ( Kaffir lime ), a note in tomato sauce

 

Citrus hystrix ( Kaffir lime ) juice is used in Thailand in some formulations of high quality shampoos. The leaves are a must in Green Curry. They also give an interesting note in the tomato sauce for pasta.
